Project Porchetta with Jason Khaytin

So if you follow me on social media, then you know that this weekend I got the chance to cook with Jason Khaytin. Jason is a passionate teen chef and my friend who I met on a project that we worked on which you'll see in the upcoming months. Our mission this summer is to cook any and every thing we love starting with porchetta. Porchetta is an Italian dish of a picnic pork shoulder stuffed with a garlic and herb paste then cooked for a few hours in the oven. This was our first attempt at Porchetta and we used an Anne Burell recipe. We managed to debone the pork shoulder ourselves plus we used some fresh herbs from Jason's herb garden for the paste. While the Porchetta was in the oven we chatted over a few virgin drinks and puff pastry tartlets as the smell of  white wine, garlic, and herbs perfumed his house. And occasionally we basted the pork with the lovely juices from the roasting tray. We served it with potatoes, Brussels sprouts, and carrots that were in the tray roasting with the Porchetta along with some fresh broccoli rabe that Jason grilled. It was a delicious meal and trust me 3 1/2 hours of waiting for the pork to be finished was so worth it! You'll definitely see more of Jason and I's cooking endeavors on this blog during the summer so stay tuned!
