Chocolate Soufflé


My best friend, David, requested that I make chocolate soufflé. And of course I couldn't say no to chocolate soufflé. Dark, rich, chocolatey it's hard to resist. But some people think that soufflé is hard to make. Rest assured this recipe is fool-proof and idiot-proof (no pun intended). So you'll get it perfect every time you make it!

Ingredients:
1/4 (2 oz.) cup dark chocolate, chopped
2 eggs, separated
2 tbsp. granulated sugar
1 tsp. cornstarch
pinch of salt
unsalted butter, for greasing
powdered sugar, for dusting

Preheat oven to 400°F

Place chocolate in a microwave-safe bowl and microwave on HIGH for 1-2 minutes (stirring every 30 seconds)

In a clean bowl or a stand mixer, whisk egg whites and salt until soft peaks form then gradually whisk in sugar until glossy, stiff peaks form

In a sepeate bowl, combine melted chocolate, egg yolks, and cornstarch then gently fold the melted chocolate mixture into the meringue

Grease two ramekins with butter and divide the mixture between the ramekins

Place on a baking tray and bake for 11-13 minutes

DO NOT OPEN THE OVEN WHILE SOUFFLES ARE BAKING

Dust with powdered sugar and serve immediately
