Chicken Quesadilla
This dish is perfect as an appetizer for a party or something easy to make if you're hungry. It's quick to throw together and you can use whatever's in your fridge. This recipe doesn't need any measurements for the ingredients because you can use as much or as little ingredients as you like. Put what you like in this quesadilla and make it your own!
Ingredients:
leftover cooked cajun chicken breast
red onion
cilantro
red pepper
flour tortillas
mozzarella cheese, grated
sour cream
1/2 lime, juiced
few fresh chives, finely chopped
Heat a pan with a shot of olive oil over high heat
Meanwhile thinly slice chicken, red onion, and red pepper
Roughly chop cilantro and scatter cheese, chicken, red, onion, cilantro, and red pepper on the tortilla
Top the tortilla with another tortilla and place in the pan for about 4-5 minutes each side
In a small bowl mix sour cream, chives, lime juice, salt, and pepper until combined
Slice the quesadilla into eighths and serve with dip
