Desserts that can be quickly assembled together with ingredients I have already in my pantry are my favorite types of desserts. Apples and strawberries may not sound like the a perfect combination, but they are when you bake them in a wonderfully flaky puff pastry shell topped with brown sugar. And you can double this recipe and freeze any turnovers you haven't baked and they'll last a month in the freezer. Perfect for those nights when you're craving something sweet.
Ingredients:
1 sheet puff pastry, thawed
handful of frozen strawberries, thawed
1/2 cup sweetened applesauce
sprinkle of ground cinnamon
handful of light brown sugar
1 egg, beaten
Preheat your oven to 425ºF
Mix together the strawberries, applesauce, and cinnamon in a bowl then cut the puff pastry into 4 squares
Spoon about 1 tbsp. of the filling into each of the square, brush the sides with the beaten egg, then fold one corner over the other to seal in the filling
Place the turnovers on a baking tray lined with parchment paper and crimp the edges of the turnovers with a fork then brush the tops with more beaten egg and sprinkle a little brown sugar over the tops of each turnover
Bake for 15-20 minutes until they're golden and puffed up
Serve warm with a scoop of ice cream
