What Am I Cooking Today?: Dark Chocolate Truffles

                                                                     
Mothers Day is around the corner and along with the gift of flowers or a new iPad, you should also give your mom the gift of food! But also give her something sweet and chocolatey like an assortment of chocolate truffles made by you. It's an easy recipe that only needs dark chocolate and heavy cream then you let your imagination take over. I like to roll them in crushed hazelnuts, cocoa powder, sprinkles, shaved coconut, and crushed pretzels. You can also flavor the ganache with orange zest, a little chili powder, or even mint extract. Plus you can put them in a decorative box to make the truffles look extra special. It's a great little treat that your mom will love. I hope you try them and have a happy Mother's Day!

Dark Chocolate Truffles Recipe

Ingredients:

8 oz good quality dark chocolate, broken into small pieces

1/2 cup heavy cream

Over a double boiler melt the chocolate and heavy cream until you have a thick chocolate ganache

Let it cool at room temperature then refrigerate for a few hours or overnight until it's set

Dip a small ice cream scoop in warm water then scoop the truffles and roll them in any coatings you desire

Chill in the fridge until ready to serve and enjoy!
