Healthy Granola Recipe

         
Everyone needs a boost in the morning but who really has time these days to eat a full breakfast with eggs, bacon, pancakes, etc. Well granola is a fantastic breakfast because you can eat it by itself or with a little yogurt and fruit. But granola from the store is usually full of sugar and artificial flavors even though the brand claims it to be "healthy". Here's a homemade granola recipe that only requires 5 ingredients, it's healthy, and you can make a big batch of it and put it in the jar and it will keep for a few weeks in the pantry. Also, once the granola is baked and cooled down you can toss in any dried fruit or nuts you love.

Ingredients:
1 cup rolled oats
2/3 cup pumpkin seeds
2/3 cup unsweetened coconut flakes
1/2 vanilla bean, seeds scraped
1/4 cup honey 

Preheat oven to 340°F

Line a baking sheet with parchment paper

Combine oats, coconut flakes, pumpkin seeds, vanilla seeds, and honey in a bowl until evenly combined

Tip the mixture onto the baking sheet an spread evenly into one layer 

Bake for 25 minutes, occasionally tossing the mixture to prevent it from burning

Cool completely and enjoy with yogurt or ice cream
