Healthy Asian Chicken


I love healthy food but I also love quick dishes that don't compromise on flavor. This healthy Asian meal features juicy orange & soy chicken, fiery chili & ginger bok choy, and fluffy white rice. This is definitely better than takeout and it's also much quicker to make than just ordering in. The colors of this dish; the vibrant green bok choy with the flecks of fresh red chili really make this meal not only very delicious but very appealing to the eye. Baked, steamed, quickly sautéed are really what bring this dish alive.

Ingredients:
2 chicken breasts, boneless and skinless
1 orange
splash of soy sauce
2 baby bok choy, washed and quartered 
1 red chili, minced
thumb sized piece of ginger
shot of oil
steamed white rice, for serving  

Juice the orange into a small bowl and add soy sauce and chicken breasts, marinate for at least 5 minutes or overnight in the fridge 

Place the chicken breasts on a small baking tray and preheat the oven to 450°F cook for 10-15 minutes until cooked through

Meanwhile, heat the oil in a pan and add the minced ginger and red chili and sauté for 1 minute

Add the bok choy and soy sauce, give it a good toss then cover and cook for 2 minutes

Serve each chicken breast on a plate with chili bok choy and steamed white rice
