Breakfast Muffins



 
If you don't have time to eat breakfast in the morning, then a batch of these healthy and delicious muffins are perfect to take with you in the morning. These muffins are scented with the aroma of cinnamon and orange and filled with apples. Also, they keep in the freezer for a month and pop them in the microwave for fresh, hot muffins whenever you want them.

Ingredients:
3/4 cup whole wheat flour
3/4 cup light brown sugar, packed
1 tsp. baking powder
1 tsp. ground cinnamon
pinch of salt
2 eggs, room temperature
1 stick unsalted butter, melted
1 heaped tbsp. plain natural yogurt
2 granny smith apples, skin-on and grated
1 orange, zested

Preheat oven to 375°F

In a bowl whisk all your wet ingredients and the brown sugar together until fully combined

Add flour, baking powder,salt, and cinnamon to the same mixture and stir

Add the grated apple and orange zest to the mixture and stir again

Using an ice cream scoop, fill a cupcake-lined muffin tin, 2/3 of the way full

Bake for about 20 minutes or until a toothpick comes out clean

Cool on a cooling rack and serve
